Instructions

  • Preheat the oven to 375 degrees Fahrenheit (190 degrees Celsius).
  • Cooking spray should be used to grease a doughnut pan.
  • Combine the flour, sugar, cocoa powder, baking powder, baking soda and salt in a large mixing bowl.
  • Whisk together the buttermilk, vegetable oil, egg, and vanilla extract in a separate mixing bowl.
  • Mix the wet and dry ingredients together until just combined.
  • Incorporate the chocolate chips.
  • Fill a piping bag or a resealable plastic bag with the batter and snip off the corner.
  • Fill each well about two-thirds of the way with batter in the doughnut pan.
  • Crumble the cookies on top of the batter.
  • Bake the doughnuts for 10-12 minutes, or until a toothpick inserted into the centre comes out clean.
  • Remove from the oven and cool for 5 minutes in the pan before transferring to a wire rack to cool completely.
